Homebrew Recipe: Bold Beach House Brown Ale

Bold Beach House Brown

This was the third beer I made in my career, and of the first three it was by far the best. I brewed this recipe from the Northern Brewer Caribou Slobber kit I received the Christmas that homebrewing officially became cemented as a solid hobby. I was very pumped about this kit because it provided a lot more specialty grains – which at the time were fascinating to me. This is one of the more heavily advertised kits on Northern Brewer, and if you are a beginning brewer this will provide excellent results.

Recipe

Grain Bill
6 lbs Amber Malt Liquid Malt Extract
1 lb Amber Dry Malt Extract
¼ lb Crystal 80L
¼ lb Pale Chocolate Malt
1/8 lb Black malt

Hop Schedule
(60) 1 oz Goldings
(45) 1 oz Liberty
(15) 1 oz Willamette

Yeast – Danstar Windsor Ale Dry Yeast
Boil Volume – 2.5 gallons
Fermentor Volume – 5 gallons

I must have forgotten to record the OG/FG but the nature of the extract brew lends itself to some consistency.

Procedure: Heated water to 160 and steeped grains for 30 mins. Followed hop schedule and then cooled down in ice bath. Dumped into fermentor and topped off with tap water to reach 5 gallons volume. Shook like crazy and then pitched yeast.

Fermentation/ Packaging – Fermented for 2 weeks in primary and then 2 weeks in secondary at around 72 room temperature. Bottled on 2/16/12 using 5/8 cups sugar dissolved into 2 cups water.

Tasting Notes – Excellent brown ale with slight hint of caramel sweetness. Well balanced bitterness but no real hop characteristics to speak of. Good medium brown color and decent clarity.
